#  涼瓜炆倉魚

- 新鮮倉魚 1條 (最好旗白倉)
- 苦瓜 1個
- 蔥 1棵
- 薑 3片
- 蒜頭 3粒

- 豆豉 1湯匙
- 糖 半茶匙
- 鹽 半茶匙
- 麻抽 1湯匙
- 紹酒 1湯匙
- 生粉 適量

1. 倉魚宰好洗淨抹乾，用適量鹽和胡椒粉擦勻魚身內外，醃約半小時，備用
2. 蒜頭、薑去皮，切成茸備用
3. 蔥洗淨切段，豆豉洗淨備用
4. 涼瓜洗淨開邊，挖去瓜籽瓤，切成片狀，備用
5. 熱油鑊，先用油將薑片爆香，放入倉魚，先煎香一面，翻轉面後再加油，煎至兩面金黃色後盛起備用
6. 原鑊加油，下薑茸、蒜茸及豆豉爆香，再下苦瓜炒勻後攢紹酒
7. 加入適量清水，下適量鹽、糖、生抽調味，撥涼瓜至油鑊邊，再放回煎好的倉魚在中央
8. 以中火炆約15分鐘至涼瓜軟身及收汁
9. 把倉魚鏟起放在碟上，餘下涼瓜用生粉水埋芡，再放下蔥段炒勻
10. 最後將汁和涼瓜淋在倉魚上即可
