#  香煎三文魚腩骨

- 三文魚骨腩 2磅
- 蒜頭 5粒
- 薑片 6片
- 生粉 cornstarch

- 鹽 半茶匙

1. 三文魚骨腩洗淨後瀝乾水，斬成合適大小(或每段斬成三吋長左右)，表面薄薄散佈生粉
2. 用鹽略醃二十分鐘
3. 蒜頭去皮，一開二拍扁
4. 薑去皮，切片
5. 燒熱油鑊(注意: 小油，因三文魚腩會釋出很多油)，下薑及蒜片，爆至邊開始微香燒
6. 放入三文魚骨腩，以中火煎至表面香脆金黃，盛起放在廚房用的紙巾吸去多剩的油即可享用。

- 進食時可撒一點椒鹽、一些檸檬汁或沙律醬也可
- 選擇三文魚骨腩的時候，盡量避免選擇魚背部脊骨的地方
