- 倉魚 1條
- 茄子 1條
- 蒜 6 - 8 粒
- 蔥 2 - 3 棵 (切段)

1. 倉魚宰好洗凈，以鹽涂勻全身，用平底鍋煎香盛起備用
2. 茄子洗淨，切件，用中火燒熱油鑊，下小許油，下茄子炒約八成熟，盛起備用
3. 油鑊下小許油，大火燒熱，加花椒，爆香後，把花椒撈出棄掉
4. 加蔥段，加豆瓣醬，放魚，放茄子，加水至浸過魚身
5. 加鹽調味，轉到中小火，蓋上鍋蓋炆焗10分鐘左右，即可上碟
