- 茄子 1條
- 班頭腩 250克
- 燒肉 150克
- 雞蛋 1隻
- 蒜頭 12粒
- 薑 8片 (切片)
- 蔥 2棵 (切段)

- 生抽
- 豆板醬
- 鹽
- 糖
- 麻油
- 胡椒粉
- 米酒

1. 班頭腩洗淨斬件，用小許鹽、胡椒粉、生粉醃一會
2. 雞蛋打勻，班頭腩上蛋汁、再上生粉
3. 燒熱油鑊，下油，用中大火，用半煎炸方式將班頭腩炸至脆身，撈起放在吸油紙，備用
4. 茄子洗淨，切件，用中火燒熱油鑊，下小許油，下茄子炒約八成熟，盛起備用
5. 燒熱砂鍋，加入豆板醬、蒜頭、薑片、蔥段爆香
6. 加入茄子、班頭腩、燒肉炒勻，炒至有香味後，加入小量米酒，調味，加入小許水，最後埋芡即可
