 蛋 白 一 個

 鹽 一 茶 匙

 酒 一 茶 匙

### 調 味 料

 水

 糖 一 茶 匙

### 做法

1. 魚 加 入 鷹 粟 粉 及 配 料 醃 數 分 鐘 並 拌 均 勻 。
2. 魚 片 煎 前 沾 鷹 粟 粉 ， 加 少 許 油 入 鑊 用 中 小 火 燒 熱 。
另 用 一 個 鑊 爆 香 薑 茸 ， 加 入 調 味 料 ， 鹽 、 酒 各 一 茶 匙 煮 滾 ， 再 放 上 白 醋 打 芡 ， 淋 至 魚 片 上 即 可 。
