### 材料

- 魚 頭 1 個
- 薑 絲 1 湯 匙
- 紅 椒 絲 1 湯 匙

### 調味料

- 糖 1 / 2 茶 匙
- 生 抽 1 茶 匙
- 酒 1 茶 匙
- 生 粉 少 許
- 豆 豉 1 湯 匙
- 蒜 蓉 1 茶 匙

### 做法

1. 魚 頭 清 除 魚 鰓 ， 洗 淨 抹 乾 ， 斬 成 細 塊 ， 加 入 薑 絲 及 紅 椒 絲 ， 再 加 入 調 味 料 醃 2 0 分 鐘 。
2. 隔 水 以 大 火 蒸 8 分 鐘 至 熟 ， 取 出 淋 上 2 湯 匙 滾 油 即 可 趁 熱 食 。
