 糖 少 許
 鹽 少 許
 雞 湯 1 杯
 粟 米 粒 半 杯
 麻 油 少 許
 胡 椒 粉 少 許

 2.
 生 粉 1 湯 匙
 水 4 湯 匙

 ### 做法

1. 魚 塊 洗 淨 ， 抹 乾 ， 切 成 骨 牌 形 ， 加 調 味 料 ， 醃 約 15 分 鐘 。
2. 把 醃 過 的 魚 肉 ， 撲 上 生 粉 ， 放 入 滾 油 大 火 中 ， 炸 至 金 黃 色 取 出 ， 上 碟 。
3. 用 2 湯 匙 油 起 鑊 ， 煮 滾 獻 汁 **1.** ， 再 加 獻 汁 **2.** ， 倒 下 蛋 白 拌 勻 至 凝 結 後 ， 淋 上 魚 塊 面 即 成 。
