 酒 1 茶 匙
 胡 椒 粉 少 許

 **2 .**
 生 抽 1 茶 匙
 糖 1 / 2 茶 匙
 生 粉 1 / 2 茶 匙
 麻 油 少 許
 酒 1 茶 匙
 油 1 湯 匙

 **做法**

1. 魚 頭 清 除 魚 鰓 ， 洗 淨 抹 乾 ， 斬 成 細 塊 ， 加 入 薑 絲 ， 再 加 入 調 味 料 (1) 醃 20 分 鐘 。
2. 梅 菜 泡 浸 一 下 ， 然 後 洗 淨 ， 搾 乾 水 分 切 粒 ， 加 入 調 味 料 (2) 略 醃 ， 將 它 倒 在 魚 身 上 。
3. 隔 水 以 大 火 蒸 8 分 鐘 至 熟 ， 取 出 淋 上 2 湯 匙 滾 油 即 可 趁 熱 食 。
