入夏氣溫轉趨炎熱，加上近日氣候潮濕，食物很容易腐敗。在高溫、潮濕環境，微生物、細菌很容易滋長，想避免食物中毒，烹飪、調理食物時，應謹守「要洗手、要新鮮、要生熟食分開、要注意保存溫度、要澈底加熱」等五項原則，以免享受美食時，發生食物中毒悲劇。

**5到10月 食物中毒高峰期**

根據歷年統計資料，5到10月為食物中毒案件高峰期，民眾要特別注意食物保存溫度、環境，避免因為保存不當導致微生物、細菌生長。

另外，炎夏季節，不少民眾喜歡吃海鮮、水產品，海鮮、貝類與各式水產品，應徹底加熱、煮熟，徹底加熱後再食用，較為安全，千萬不要為了追求口感，忽略生食風險，餐飲業者也應確保水產品來源、品質，多為消費者提供熟食產品，且烹煮、調理食品前後，都需要將雙手洗乾淨，處理生、熟食時，刀具、砧板應分開，避免交叉污染。

**預防食物中毒5大招 避免細菌、微生物孳生**

預防食物中毒五大招，希望大家吃得安心、健康。

第一，要洗手：烹煮、調理食品前後，都要澈底將雙手清潔乾淨，若有傷口，就要包紮。

第二，要新鮮：不只食材要新鮮，用水也要注意要衛生。

第三，要生、熟食分開：處理生、熟食過程，需要使用不同器具，以免發生交叉污染，增加食物中毒風險。

第四，要徹底加熱：食物中心溫度需要超過攝氏70度，細菌才容易被消滅。

第五，要注意食品保存溫度：生鮮食品保存溫度要低於攝氏7度，在室溫下不宜放置過久，否則細菌、微生物很容易大量滋長，造成食物中毒風險。
