- 白鱔十二兩(最好選擇一斤半重的，半條己足夠)
- 辣椒 1-2隻
- 蒜 3-4粒
- 蔥 1棟
- 豆豉 2湯匙

- 鹽 1/2 茶匙
- 糖 1 茶匙
- 油 1湯匙
- 胡椒粉 少許
- 生抽 1湯匙
- 生粉 1茶匙

1. 白鱔洗淨，斬成適量大小
2. 辣椒切成辣椒絲備用
3. 蒜去皮，切成蒜蓉
4. 蔥洗淨，切成蔥花備用
5. 先調較好醬汁醃料，油、豆豉、蒜蓉、辣椒絲、鹽、糖、胡椒粉、生抽及生粉加入碗中拌勻
6. 將醬汁拌勻白鱔，醃約二十分鐘
7. 燒熱滖水，大火隔水蒸約10分鐘，澆上滾油及蔥花即可享用
