- 銀芽 1/2斤
- 花甲 1斤
- 洋蔥 半個
- 紅蘿蔔 半條
- 薑 數片

- 鹽 1/2茶匙
- 糖 2/3茶匙
- 米酒 1湯匙
- 生粉 1/2湯匙

1. 花甲浸泡在鹽水，讓其吐沙，須換水3-4次
2. 銀芽洗淨，泡浸一會後，盛起備用
3. 洋蔥去皮，清洗乾淨，切絲備用
4. 紅蘿蔔去皮，清洗乾淨，切絲備用
5. 薑去皮，切片備用
6. 煲滾約 1 公升水，加入薑片，小量鹽
7. 倒入花甲，煮至花甲開殼，盛起
8. 將花甲起肉，花甲肉沖洗洗淨，盛起備用
9. 燒熱油鑊，下油，下洋蔥絲起鑊
10. 下紅蘿蔔絲炒均，下銀芽同炒
11. 下花甲肉炒均，灒酒，下鹽及糖炒均調味，即可上碟
