1. 鯇魚腩清洗乾淨，切成長條及半吋厚，備用
2. 鯇魚腩加入調味料，略醃15分鐘備用
3. 薑去皮，切片後再切成絲備用
4. 燒熱油鑊，下油，下薑絲起鑊
5. 加入鯇魚腩，炒片刻至魚身轉奶白色及腩邊帶微香，即可上碟

注意火力：若火太猛及鑊太熱, 可調整熱鑊離火及旋轉鑊的不同位置
