### 做法

1. 黃 鱔 去 骨 ， 用 熱 水 燙 去 黏 液 ， 洗 乾 淨 切 粗 條 ， 加 調 味 料 撈 勻 。 燒 熱 油 鑊 放 點 油 ， 先 將 白 鱔 件 放 入 ， 中 火 正 反 兩 面 煎 至 夠 熟 ， 剷 起 備 用 。
2. 薑 切 摩 片 ， 紅 椒 切 角 ， 蔥 切 段 。
3. 梅 子 去 核 加 入 糖 拌 勻 備 用 。
4. 小 油 起 鑊 ， 薑 芽 放 入 鑊 中 炒 至 軟 身 。 再 加 入 紅 椒 ， 蔥 一 起 炒 ， 加 入 鱔 球 ， 贊 酒 ， 加 入 鑊 中 炒 至 成 糖 膠 芡 即 成 。
