### 做法

1. 洗 淨 排 骨 抹 乾 ， 用 調 味 料 拌 勻 醃 約 20 分 鐘 。
2. 苦 瓜 洗 淨 去 核 ， 切 塊 ， 出 水 約 1 分 鐘 ， 取 出 用 凍 水 沖 及 瀝 乾 備 用 。
3. 用 少 許 油 爆 香 蒜 、 豆 豉 及 排 骨 ， 加 入 苦 瓜 及 獻 汁 ， 炆 煮 至 苦 瓜 變 軟 及 出 味 ， 即 可 上 碟 。
