- 魚滑 半磅
- 茄子 兩條

- 面豉醬 半茶匙
- 南乳 一磚
- 胡椒粉 少許

1. 茄子清洗，垂直每半吋削皮，切段成細長條，備用
2. 將調味料拌勻略醃
3. 先將魚滑放入煎鑊壓平略為煎香兩面，切段如茄子形狀，平均鋪在碟上
4. 先將茄子平均鋪在碟上，在上層放煎好的魚滑，將混好的調味料放在魚滑上面
5. 燒熱滖水，大火隔水蒸約 5-8 分鐘，從蒸籠拿出拌勻
6. 上桌時灑點蔥花即可
