#### 製 作 過 程

1. 將新鮮香荽徹底洗淨，切段備用；皮蛋去殼後一開四塊備用。
2. 鮮魚片用少許鹽及生粉略醃 10 分鐘，生薑切成薄片。
3. 燒熱鑊，下少許植物油，放入生薑片略為爆香，注入 8 碗清水以大火煮沸。
4. 物理熱傳導沸騰後，先放入皮蛋塊與新鮮香荽段，維持大火滾煮 5 分鐘，讓香荽的天然精油與皮蛋物理性融入湯水中。
5. 最後將鮮魚片均勻散落鍋中，保持大火滾煮至魚片剛好變白熟透（約 2 分鐘），熄火，撒入海鹽、胡椒粉及芝麻油調味即成。
