- 牛腩 一斤
- 枝竹 4-5片
- 蒜頭 2-3粒
- 乾蔥 3-4粒
- 蔥 1棵
- 薑片 數片

- 鹽 適量
- 老抽 1 湯匙
- 蠔油 2 茶匙
- 柱候醬 1匙
- 冰糖 小量

 預備功夫：

1. 牛腩清洗乾淨，去肥，切塊，用小量鹽醃半小時
2. 把牛腩飛水，取出，再以清水沖洗盛起備用
3. 枝竹清洗乾淨，用水浸軟，切件備用
4. 蔥清洗乾淨，切段備用
5. 薑去皮切片，拍扁備用
6. 乾蔥去皮清洗乾淨備用
7. 蒜頭去皮，拍扁備用
8. 一湯匙柱候醬，以清水開勻備用

煮法：

1. 燒熱油鑊，下油，燒滖後下蒜頭、乾蔥、薑片及蔥段起鑊
2. 下牛腩爆香，倒入柱候醬汁炒勻，加清水至蓋過牛腩
3. 拌勻所有材料，可加入老抽及調味
4. 煮滾後轉中火，炆約30分鐘，加入枝竹及冰糖、繼續用慢火炆至汁開始收乾後即可

 枝竹是炸過的，所以用來炆食物會特別入味
