| chu-hau paste | 2 tbsp. |
| chopped garlic | 1 tablespoon |
| chopped ginger | 1 tablespoon |

| 生粉 | 一茶匙 | starch | 1 tsp. |
| 水 | 三湯匙 | water | 3 tbsp. |

#### 做法 Method

1． 蘿 蔔 洗 淨 削 皮 ， 切 大 塊 。

Wash the turnips, skin and cut into large pieces.

2． 牛 腩 原 塊 飛 水 十 分 鐘 左 右 ， 取 出 切 大 件 拌 以 老 抽 一 湯 匙 、 酒 一 湯 匙 及 麻 油 一 茶 匙 。

Wash the flank beef clean and scald in boiling water for 10 minutes, cut into large pieces. Mix 1 tablespoons dark soy sauce, 1 tbsp. wine and 1 tsp. sesame oil with the flank beef.

3． 燒 熱 油 ， 牛 腩 下 鑊 ， 加 入 蒜 茸 、 薑 茸 各 一 湯 匙 及 柱 侯 醬 兩 湯 匙 同 炒 。

Heat oil, put the flank beef in the wok and add chopped garlic, chopped ginger and 2 tbsp. chu-hau paste in to stir-fry.

4． 改 用 中 慢 火 炆 ， 放 入 八 角 及 水 （ 水 深 至 覆 蓋 牛 腩 面 ） ， 炆 兩 小 時 至 牛 腩 酥 爛 。

Bring to boil and turn to med-low heat. Add star aniseeds and water (cover the flank beef) to cook the flank beef for 2 hours until it becomes tender.

5． 當 牛 腩 煮 熟 後 ， 加 入 蘿 蔔 同 煮 十 分 鐘 ， 拌 入 調 味 料 ， 即 成 。

Add turnip, cook for 10 minutes, stir the Seasonings in and served.
