### Mushroom Salty Ribs Congee

2人份量

將鹹豬骨煲得爛爛的，米和豬骨很配，味道濃香，並且有益健康，在咸香中帶些香菇味，營養又美味。

##### 材料：

- 米 半杯量米杯
- 豬脊骨 300克
- 香菇 中型,8~10朵
- 蔥 1根
- 姜3-4片
- 水 1.5公升
- 油，鹽 適量

##### 材料預備：

- 將豬脊骨洗淨，裝盤和加入鹽醃一夜備用。
- 姜片切片後切絲，裝盤備用。
- 香菇浸泡20分鐘，洗淨，切條備用。
- 蔥洗淨切小段（蔥花），裝盤備用
- 米洗淨， 加50克鹽，用熱水泡30分鐘

##### 做法：

#### 明火煮法

1. 將咸豬骨汞水，略洗去表面的鹽
2. 在中窩加入1.5公升水，同時放入豬骨和香菇，蓋上鍋蓋大火煮沸，轉中小火燜約20分鐘
3. 轉中火加入浸泡的米，中料煮20分鐘，加入姜絲略索1~2分鐘，加入蔥花下油鹽，攪拌均勻，享用

#### 電飯鍋煮法

1. 在中窩加入1.5公升水，同時放入豬骨和香菇，蓋上鍋蓋大火煮沸，轉中小火燜約20分鐘
2. 將豬骨和香菇倒入電飯鍋裡煮，加入浸泡的米，蓋上電飯鍋蓋，按掣煮粥掣
3. 聽見電飯鍋跳掣聲音，即可開鍋蓋加入蔥花下油鹽，攪拌均勻，享用

##### 貼士

- 注意在明火煮粥時，鍋蓋不要全蓋上, 否則, 很易溢出
- 因豬骨已醃咸，留意是否仍需要加鹽
- 吃粥時，加一點油可增滑度
