這樣處理和煲出來的山藥排骨，綿密口感都是一吃就上癮！ 隨了大人外, 尤其非常適合老人及小孩食用！

份量: 4人 (可隨人數增份量)

#### 材料：

- 山藥 約1.5斤
- 排骨 約1斤
- 薑 (適量)
- 蔥花/香菜 (適量)

#### 副料/

- 芫茜 2-3 根
- 蔥花 適量
- 高湯/水 300ml

#### 調味( 排骨)：

- 鹽、生粉、生薑、花生油、胡椒粉、清水、米酒 (適量)

#### 烹飪方法：

1. 山藥約1.5斤，去皮清洗乾淨，用清水浸泡著，備用
2. 排骨約1斤，砍好清洗乾淨，加入適量鹽、花生油、生薑、生粉、白胡椒粉、清水，用手不斷抓均勻，至起膠質，備用
3. 鍋中加入清水燒開，將備用排骨飛水，約3分鐘起鍋，清洗乾淨。
4. 用新鍋再加入排骨和清水，水浸過排骨（喜歡喝湯，可以多加清水）大火燒開，關至中火煲十五分鐘
5. 加入備用山藥大火燒開，關小火煲約20分鐘，加入適量鹽、蔥花或香菜即可食用！

**山藥:**
山藥性平微溫、味甘無毒，為入脾、肺、腎三經. 山藥成份含有自由氨基酸、黏蛋白、膽鹼、澱粉 𡓨 、皂 𢜟 、多酚氧化 𡓨 、維生素 B1 、 B2 、 C 及礦物質鈣、磷、銅、鐵等。
山藥作用: 益氣補脾、滋補作用、能助消化、補虛勞益氣力，並有緩瀉袪痰等作用。久食也會使皮膚光滑、白嫩細膩，所以山藥皆可為滋補及食療佳品。
