### 材料

- 黃 鱔 1 斤
- 粉 絲 2 包 ( 細 )
- 薑 2 片
- 蔥 1 棵
- 芫 荽 1 棵

### 調味份量

- 鹽 1 / 2 茶 匙
- 生 抽 1 茶 匙
- 麻 油 少 許
- 胡 椒 粉 少 許

### 醃料份量

- 生 抽 1 / 2 湯 匙
- 生 粉 1 / 2 湯 匙
- 胡 椒 粉 少 許
- 糖 少 許

### 做法

1. 黃 鱔 去 骨 ， 用 熱 水 燙 去 黏 液 ， 洗 乾 淨 切 粗 條 ， 加 調 味 料 撈 勻 。
2. 粉 絲 泡 浸 至 軟 。
3. 少 許 油 炒 香 蔥 及 薑 片 ， 加 入 粉 絲 炒 勻 ， 贊 酒 ， 加 入 調 味 料 及 4 杯 水 ， 煲 滾 後 加 入 黃 鱔 片 ， 煮 八 分 鐘 至 鱔 熟 ， 除 去 薑 及 蔥 ， 試 味 及 加 入 芫 荽 即 可 上 碟 。
