#  魚頭苦瓜湯

在這盛夏之際，溫度太高，令人十分煩燥，連呼吸也不暢順，感到悶熱難抵，頭昏腦脹，食慾不振。就要多飲苦瓜湯了，此湯可令你感到舒爽，冇煩燥。全因苦瓜可消暑，是治中暑熱病的良藥，黃豆又有清熱解毒之效，而大魚頭益腦去頭風，故此在這高溫之時不妨多煲此湯飲，此湯有湯可飲，又有湯料可吃，但身體較虛寒的人就不是那麼適合。

#### 材料

- 大魚頭 1個
- 苦瓜 1斤
- 排骨 12兩
- 黃豆 1兩
- 咸菜 半個
- #### 做法

1. 先把黃豆洗淨，用水浸幾小時，把水倒去，備用。
2. 大魚頭洗淨，抹乾，鑊燒紅後放少許油，把魚頭兩邊煎至微黃，待用。
3. 苦瓜洗淨，去籽去內膜，切方大塊。
4. 排骨洗淨，出水，備用。
5. 咸菜切塊，用淡鹽水略浸10分鐘，洗淨。
6. 鍋中注入適量之清水煲滾，放入所有材料，大火煲20分鐘，轉慢火煲約2個小時，加鹽調味，即可趁熱飲，湯料可盛出蘸醬油吃。

#### 食物小百科

大魚頭 － 有益腦之效，去頭眩，治風寒頭痛及耳鳴。
苦瓜 － 又名涼瓜，含豐富維他命B及C，能清熱解毒，消暑明目，通腸胃，助消化，治中暑及熱病等。
黃豆 － 含豐富蛋白質、脂肪、碳水化合物、鈣、磷、鐵、硫胺素及核黃素，所含的磷、鐵對缺鐵性貧血及體弱神經衰弱的人，最適多吃，優質蛋白質特別豐富，高過雞蛋、牛奶及瘦肉，所含不飽和脂肪酸比動物性脂肪含量高，是高血壓及冠心病者的良好食物。其療效更可活血利水，袪風及解毒。
咸菜 － 是由大芥菜醃製而成的，含維他命A、B、C和D，可開胃助消化，解燥，因芥菜都是較寒涼的，故此咸菜不宜腸胃濕熱、脾腎弱或有氣喘病的人。
