Spiced Spareribs With Beancurb in Salt Pepper Sauce

Sangkap Panimpla
600g tadyang ng baboy
2 binalot na tokwa

2 kutsaritang siling - asin
1/2 kutsaritang paminta
1 kutsarang Hua Diao
1 kutsarang tubig
1 kutsaritang arina

Ingredients Seasoning
600g Spareribs
2 sections Wrapped Beancurds
2 teaspoons peppered salt
1/2 teaspoon pepper
1 tablespoon Hua Diao (Shaoxing wine)
1 tablespoon water
1 teaspoon cornflour

 

Pamamraan
  1. Hugasan ang tadyang ng baboy at budburan ng siling-asin at arina. Ibabad ng kalahating oras. Hiwain ang binalot na tokwa ng pahaba.
  2. Ipainit ang kawali na may mantika. Ilagay ang tuyong tokwa. Ihalo ang tadyang ng baboy sa kabilang panig ng kawali.
  3. Ilagay sa katamtamang apoy. Igisa ang tadyang ng baboy hanggang sa bumango. Baligtarin. Igisa ng tuyong tokwa hanggang sa magkulay brawn. Igisa ang tadyang ng baboy hanggang sa maluto.
  4. Paghaluing mabuti ang isang kutsaritang siling-asin, kalahating-kutsaritang paminta, isang kutsarang Hua Diao, isang kutsarang tubig para sa sarsa. Ilakas ang apoy at ibuhos ang sarsa ng dahan - dahan sa kawali. Igisa hanggang sa lumapot ang sarsa.
Method
  1. Wash spareribs clean. Add in one teaspoon pepper salt and one teaspoon cornflour for marinade. Marinate the spareribs for half an hour. Cut the wrapped beancurds into long length and thicken sections.
  2. Heat the wok. Pour in dash of oil. Put in dried beancurd. Add in spareribs from another side of the wok.
  3. Turn to medium heat. Shallow-fry the spareribs and dried beancurds until fragrant. Turn it up side down. Shallow-fry the dried beancurd until golden brown. Shallow-fry the spareribs until cooked.
  4. Mix a teaspoon of peppered salt, 1/2 teaspoon of pepper, 1 tablespoon Hua Diao and 1 tablespoon water well. Turn to high heat. Pour in the sauce in the wok slowly. Shallow-fry until the sauce dries up. ¡@
