75g galangal (Alpinia galangal) |

2 kutsaritang asin

2 cups broth or water
2 tsp salt
1 tsp sugar |

- Hugasan ang manok, punasan ng malinis na bimpo. Hugasan ang
galangal at tadtarin sa piraso.
- Ipainit ang isang kutsarang mantika sa palayok na panggisa sa
galangal.
- Ilagay ang manok sa palayok. Takpan para maluto. Ibuhos ang
isang tasang broth sa gilid ng takip. Pahinaan ang apoy at iluto
ng 7 minuto. Alisin ang takip, ihalo ang asin, asukal at galangal
sa broth, takpan at ilaga ng 8 minuto. Hanguin at tadtarin sa
piraso, ibuhos ang sarsa sa ibabaw at ihain.

| Method |
- Wash the chicken, hang it dry or pat dry with a cloth. Wash
the galangal and chop into pieces.
- Heat 1 Tbsp of oil into a clay pot to saute the galangal.
- Heat 1 Tbsp of oil into a clay pot to saute the galangal. 3.
Put the chicken into the pot, cover to cook. Pour in I cup of
broth through the rim of the lid. Turn the heat down and cook
for 7 minutes. Remove the lid, add the salt, sugar and galangal
into broth, cover and stew for a further 8 minutes. Remove and
chop into pieces, pour the sauce on top and serve.
