Candied Mandarin - Orange and Citrus Madurensis

4 kahel
2 mansanas
4 citrus madurensis o lemon
600g asukal na brown (bricks)

4 mandarin-oranges
2 apples
4 citrus madurensis or lemon
600g brown brick sugar
6 slices of ginger
450g water

 

Pamamraan
  1. Hugasan ang kahel; paraanan ng kutsilyo ang balat para maalis ang mapait na katas ng prutas. Pitpitin at ibabad sa tubig ng isang oras. Pigain para maalis ang natitirang mapait na katas, budburan ng asin at hugasang mabuti. Pigain ang lemon; hugasan at hatiin ang mansanas. Alisin ang magkabilang dulo.
  2. pakulo ang tubig at ihalo ang nahiwang luya, hinaan ang apoy, ilagay ang asukal at lutuin sa mahinang apoy hanggang sa kumulo.

Method
  1. ash the surface of the mandarin-oranges, score them a few times with a knife (the scorings can facilitate better penetration of flavor and help the release of bitter substances from the fruit), flatten them and then soak in water for an hour.   4. Remove any impurities from the syrup, keep simmering for half an hour. The citrus madurensis and apples can be served right the way, but mandarin-oranges have to be set aside for 2 hours. Before serving, heat the syrup until it boils. The mandarin-orange is hot, the peel is gummy and the flesh is sweet and delicious.
