Stir-Fried Kohl-Rabi with Dried Sole

Sangkap Panimpla
600g kohl-rabi
75g tuyong sole
1 tali chinese celery nahiwang karne (any kind) o isda
1 1/2 kutsaritang fish sauce
1/2 kutsaritang asukal
1 kutsaritang alak
1 kutsaritang arina
4 kutsarang broth
Ingredients Seasoning
600g kohl-rabi
75g dried sole
1 small stalk Chinese celery a little meat of any kind, sliced
1 1/2 tsp fish sauce
1/2 tsp sugar 1 tsp wine
1 tsp corn flour 4 Tbsp broth

 

Pamamraan
  1. Hatiin ang kohl-rabi sa apat na bahagi, alisin ang matitigas na bahagi. Gayatin ang dahon at hiwain ang tangkay. Ibabad sa naasnang tubig at hugasang mabuti bago gamitin.
  2. Alisin ang tinik ng isda, iprito hanggang maluto. Palamigin at tadtarin ng pino. Alisin ang dahon ng celery at tadtarin ng pino.
  3. Ipainit ang palayok at lagyan ng konting mantika. Igisa ang kohl-rabi, tangkay at dahon. Dagdagan ng broth habang ginigisa. Kapag lumambot ang gulay, hanguin.
  4. Ipainit muli ang palayok at igisa ang celery at tinadtad na isda at dahon hanggang bumango. Ibalik ang kohl-rabi sa palayok at haluing mabuti. Ihalo ang broth, fish sauce, asukal at alak.
  5. Tunawin ang arina sa tubig. Ihalo sa niluluto. Palaputin at ihain.
Method
  1. Cut the kohl-rabi into 4 sections, remove the tough and woody parts. Shred the leaves and slice the stem, then soak in salted water and rinse well before using.
  2. Bone the fish, fry until it is fragrant, then chop it finely. Remove the leaves of the celery and finely chop it.
  3. Heat the wok and add a little oil, stir-fry the kohl-rabi stems and the leaves, keep adding broth while stir-frying. When the vegetable is tender, remove.
  4. Heat the wok again to saut~ the celery and the chopped flounder until fragrant. Return the kohl-rabi into the wok and stir well, then add the broth, fish sauce, sugar and wine.
  5. Dissolve some corn flour in water, stir in the solution while frying. Dish up when the sauce thickens up.

 

Ingredients
Heat the wok, add a little oil to stir-fry the vegetables until tender
Stir-fry the celery and the chopped dried sole until fragrant.
