Isdang Croacker na may Binurong Mustard
Yellow Croacker with Chiuchow Preserved Mustard

600g isdang croacker
450g binurong mustard
4 binurong plams
1 pulang sili
75g luya
8 ngipin ng bawang
2 berdeng sibuyas
1/2 kutsaritang asin
1 kutsaritang asukal
1 kutsarang alak
Ingredients Seasoning

1 head of yellow croaker, about 600g
450g Chiuchow preserved mustard
4 preserved plums
1 red pepper
75g ginger
8 cloves garlic
2 green onion

1/2 tsp Salt
2 tsp sugar
1 tbsp Shao Xiang wine

 

Pamamraan
  1. Linisan ang isda; gayatin ang binurong mustard, hugasan at ibabad sa tubig.
  2. Hugasan ang pulang sili; hatiin ang berdeng sibuyas ng 1" na haba; balatan ang bawang; durugin ang binurong plams.
  3. Iprito ang isda sa mainit na mantika hanggang sa lumutong at mabango.
  4. Igisa ang bawang, pulang sili, luya at berdeng sibuyas, ihalo ang binurong mustard at igisa hanggang bumango. Ilagay ang isda at binurong mustard sa palayok, buhusan ng tubig at pakuluin. Pahinaan ang apoy at lutuin ng 40 minuto. Panghuli, ihalo ang panimpla at saka ihain.
Method
  1. Clean the fish; roughly shred the preserved mustard, wash and soak in water.
  2. Wash the red pepper; roughly shred the ginger; cut the green onion into 1" lengths; peel the garlic; mash the preserved plums.
  3. Shallow-fry the fish with oil until it is crispy and fragrant.
  4. Saute the garlic, red pepper, ginger and green onion, add the preserved mustard and stir-fry until fragrant. Put the fish and preserved mustard into a clay pot, add some water and let it boil, then turn the heat down and cook for about 40 minutes. Finally, add the seasonings to serve.
