Fried Rice with Taro - Chiu Chow Style

320g gabi
120g cured pork at binurong sausages
40g tuyong hipon
80g mani
1 bungkos chinese celery
1 leek
2 tasang bigas

320g taro
120g cured pork and preserved sausages
40g dried shrimps
80g peanuts
1 bunch of Chinese celery
1 leek
2 bowls long-grain rice

- Hugasan at pasingawan ang bigas (dagdagan ng 90% tubig sa sukat
ng bigas). Balatan, hugasan at hiwain ng pakuwadrado ang gabi,
pasingawan sa ibabaw ng bigas.
- Ibabad ang tuyong hipon. Hugasan at tadtarin ang celery at leek.
Hiwain ng pakuwadrado ang baboy at sausages. Iprito at balatan
ang mani.
- Igisa ang tuyong hipon, baboy, sausage, celery at leek, ihalo
ang panimpla. Isama ang gabi at kanin. Ilagay ang mani kapag uminit
ang kanin. Ihain agad.

- Wash and steam the rice (add 90% as much water as the rice).
Peel, wash, and dice the tare, steam it over the rice.
- Soak the dried shrimps. Wash and chop the celery and the leek.
Dice the cured pork and preserved sausages. Deep fry and skin
the peanuts.
- Fry the dried shrimp, cured pork, sausage, celery and leek,
add in seasoning. Then stir in the tare and cooked rice to fry.
Add peanuts when the rice is hot. Serve at once.
