Cooling kelp with assorted vegetables

Ingredients

160g kelp
80g Chinese celery
80g celery
40g carrot
40g dried shrimps
1 red chilli pepper

 
Healing Effect

reduce lymphadenities, lower the "heat" and nourish the skin.

Method

1. Soak and clean the kelp, then soak it in boiling water until there are bubbles.  Heat it for 1 minute, soak it in cold water for 5 minutes and shred it. Cook it in salty water for another minute and cool it in cold water for 10 minutes again.

2. Shred the celery, carrot and red pepper; chop the dried shrimp, marinate it with light soya sauce and water and steam it over low heat for 30 minutes, let cool.

3. Season the kelp, celery and red pepper with salt, sugar and the cooled shrimp sauce, garnish with carrots and serve.

Practical Tips:

You can also add in the jelly fish to develop flavour.
