Congee
with Eclipta

| Ingredients |

150g eclipta
300g lean pork
2 green onions
1 1/2 bowl rice grain |
Pinch of salt |
| Method |
- Soak and wash the eclipta, then add 15 bowls of water to cook
for 1 hour. Strain to extract the juice from the eclipta and set
aside, discard the plant. Marinate the pork with a little salt,
steam until it is cooked and cut into small pieces; wash and chop
the green onions; wash the rice grain and drain well.
- Boil the eclipta juice, then add it to the rice grain. When
the water boils, turn to medium heat and cook until the rice grain
'blossom'.
- Turn the heat down and simmer for 5 minutes, then add the pork.
- Season with salt, sprinkle with chopped green onion before serving.
